Spaghetti Squash I

You can do SOO much with Spaghetti squash, I love it! Here is one recipe I love::)
Ingredients 

 1 spaghetti squash, halved lengthwise and seeded
 2 tablespoons olive oil
 1 onion, chopped
 1 clove garlic, minced
 1 1/2 cups chopped tomatoes
 3/4 cup crumbled feta cheese (I actually usually used Parmesan, and I LOVE it, but I used more like 1 cup-1 1/4 cups, basically just to taste)
 3 tablespoons sliced black olives (or more;)
 2 tablespoons chopped fresh basil (I used dried basil, to taste)

Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
Place spaghetti squash with cut sides down on the prepared baking sheet, and bake 30-50 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. (When I cook my spaghetti squash halves, I usually lightly coat them with olive oil). Remove squash from oven and set aside to cool enough to be easily handled.
Meanwhile, heat oil in a skillet over medium heat. Cook and stir onion in oil until tender. Add garlic; cook and stir until fragrant, 2 to 3 minutes. Stir in tomatoes and cook until tomatoes are warmed through.
Scrape out spaghetti squash from the shell (it should be stringy) and add to hot skillet. Add cheese, sliced olives, dried basil. . .and whatever else you want, really. Cook until the cheese is melted and sticky.
Super easy and super yummy:)
