Quick Whole Wheat Batter Bread with Oatmeal and Flax
Ingredients:
2 1/2 cups hot water (sometimes I do half milk, half water)
1 tablespoon yeast
1/3 cup oil (I usually use olive)
1/3 honey (give or take. . .)
2 teaspoons salt
3-4 cups whole wheat flour
1 cup steel cut oats
1/2 cup flax (really as much as you desire)
Directions:
In a large bowl, dissolve yeast in hot water.
Preheat oven to 250 degree fahrenheit.
Add oil, honey, salt, half the flour, oats, and flax to yeast and water.
Mix with flat beater attachment.
Add remaining flour to make a thick, sticky batter. Yes, the dough is really sticky.
Knead well (at least 5 minutes in the kitchenaid mixer)
Place dough in two well-greased loaf pans. Put pans in warm oven.
TURN OVEN OFF.
Lat loaves sit in warm over for 20 minutes.
With loaves still in oven, turn oven to 350 degrees fahrenheit.
Set timer for 30 minutes. Remove bread from oven when timer goes off. If loaves arent nicely browned, bake for an additional 3-5 minutes.
Makes 2 (small) loaves.
