(Chicken and Veggie) Pad Thai Ginger
I made chicken and vegetable pad thai today and it was freakishly good. Thai food is my absolute favorite, so I was really excited to make it. I made it once a blue moon ago, and it wasn't so yummy. But this one. . . mmm mmm:)
Ingredients:
Rice Pasta Noodles
4 tbsp veg. oil (I used Olive though)
1 egg
Veggies (I used onions, carrots, and broccoli)
Meat (I used chicken, but seafood is often used)
2 tbsp water
Pad thai stir fry sauce
Directions:
1. In a medium saucepan, bring 6-8 cups of water to a boil. Turn off heat.
2. Immerse noodles in the hot water. Let stand 3-5 mins, until noodles are soft yet firm.
3. Drain and rinse noodles in cool water. Set aside.
4. In a wok or frying pan, heat 2 tbsp oil over high heat. Add egg (I added 1-2 tbsp milk to my scrambled egg) and fry until scrambled. Set egg aside.
5. In the same wok/frying pan, add remaining 2 tbsp oil. Stir fry meat and veggies. (At this point I also added some of the stir-fry thai sauce. )
6. Add noodles, 2 tbsp water, and enough pad thai sauce to lightly coat all the noodles. Add egg.
7. Stir fry all ingredients together, about 2-3 minutes!
