Tikka Masala
This is kind of a cheater, cheater pumpkin eater recipe, since I just used a package of simmer sauce and sauteed it with veggies and chicken. . . but I don't care because it was SOOO good!
Ingredients
2 Tbsp sunflower oil or ghee (I used Olive Oil)
2 lbs chicken, tofu, or veggies (I did a mix of chicken and veggies, but next time I'll use less of each because I like it super saucy)
1 pouch Saffron Road Tikka Masala Simmer Sauce
Directions
1. Heat oil in heavy skillet. Add meat and veggies.
2. Simmer: reduce heat, add sauce to skillet. Stir gently and simmer until sauce just begins to bubble.
3. Serve over rice or with naan. (I served it with couscous, but would not really recommend it:)
