Energy bites

Ingredients
  • 1 cup oats
  •  ½ cup almond butter
  • 1 cup pitted dates
  • 1 tablespoons pure maple syrup.
  • 1 inch fresh ginger 
  • unsweetened coconut for rolling
Directions:
  • Combine all ingredients into a food processor and blend until combined.
  • Using small ice cream scoop, form into balls.
  • Roll in coconut.
  • Store in air-tight container in refrigerator.
