Crockpot Ground Beef/Potato/Veggie "Stew"
This is a recipe I made up because we bought a ton of ground beef and I could find very few ground beef crock pot recipes online.
It's a very easy recipe, and you can't really mess up. Add more potatoes, as many veggies and type of veggies as you desire.
Ingredients:
- 3-5 Potatoes, washed and sliced in 1 inch pieces
- 1 pound ground beef
- 3-4 long carrots
- 1 can corn, drained (or you can use fresh and it's even yummier)
- 1 can beans, not drained (kidney, black, you pick; I've used both)
- 2-3 fresh tomatoes
- 1 whole green pepper
- Green beans
- a couple sliced mushrooms (optional)
- Cumin to taste
- salt & pepper to taste
- fresh garlic (1-3 cloves, depends how much garlic you like)
- BBQ sauce (probably about 1 cup)
- 1/2- 2/3 cup water
Throw it all in the crock pot. Cook on low for ~6 hours, or on high for ~3 hours.
Just watch that the meat doesn't overcook but the potatoes get cooked sufficiently. I keep the potatoes submerged under everything else so they cook enough!
Eat on a bed of brown rice and a side of salad. YUM.
