Black bean, Mushroom & Spinach hash with Roasted veggies and Quinoa

I made this up and I love it! I love being creative with food.

Ingredients:
- 1 can black beans, drained and rinsed
- 2-3 cups spinach, chopped finely 
- 1-2 cups mushrooms, chopped finely
- quinoa
- potatoes (sweet or yellow)
- carrots

Directions:
Heat oven to 400. Chop potatoes and carrots in thin 1/2 inch slices. Place on cooking sheet with a drizzle of olive oil and salt/pepper. Cook for 20-25 minutes or until soft. Broil for 30 seconds to crisp. 

Rinse 1 cup quinoa in a fine mesh sieve until water runs clear, drain and transfer to a medium pot. Add 2 cups water and salt and bring to a boil. Cover, reduce heat to medium low and simmer until water is absorbed, 15 to 20 minutes. Set aside off the heat for 5 minutes; uncover and fluff with a fork.

Cook chopped mushrooms on stove top. Add salt and pepper to taste. Add beans, and stir together. Heat until warmed throughout and the beans are softening. Add chopped spinach. Add garlic salt, onion powder to taste. You have your plant protein hash!
