Thai Coconut Pineapple Curry
This stuff makes my mouth water just THINKING about it!!
Ingredients
- 2 cans coconut milk
- 2 peppers sliced
- 3 large carrots sliced
- 1 can of sliced pineapple
- 1 onion sliced or diced
- 4 mushrooms cubed
- cubed potatoes if you want
- honestly whatever veggies you want!
- 1 bottle Thai red curry paste
- 1 tbsp Turmeric
- 2 tbsp curry powder
- 1 tbsp red chili powder
- 1 - 2 tbsp cumin powder
- 2-3 inches of fresh ginger, peeled and minced
Directions
1. Heat oil. Add onion and garlic until fragrant. Add Curry paste, spices, ginger, and veggies. Heat on medium. Add coconut milk and let simmer for 15 minutes. Add pineapple and 1/4 cup pineapple juice. Simmer for 15 more minutes.
