Veggies and Orzo (meatless or with sausage)
Ingredients
- 1 box of dry orzo pasta, cooked
- 5 cups broccoli
- 2 tomatoes, diced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 purple onion (red, whateva) diced
- garlic, minced
- salt and pepper to taste
- basil, parsley
- garlic salt
Directions
Cook garlic and onions and warm oil together until fragrant in large pot. Next, pour in all veggies with a little water and cook until tender. While cooking, add salt and pepper and any other spices to taste. Basil and parsley are good options. The garlic and onions will add the flavor best of all.
If you plan to add sausage, cook in separate pan and add at this point.
Once veggies are tender, add orzo pasta and a drizzle of olive oil. Salt and pepper to taste.
